Merry Christmas to you and thank you for being here as well. I hope you remain for another 10+ years.
Our Christmas breakfast is a relatively fast german puff pancake with apples. I include an assistant to peel and slice apples, while I prepare the batter. 30 ish minutes later and we are enjoying breakfast. Now I only have a family of 3 people, so one pancake feeds us. I don’t imagine it feeding anything more than 6 people.

Decisions, decisions. So many yummy things. I too love Xmas breakfast and rely on having it ready to go ahead of time. We really love your tator tot breakfast casserole and also the overnight rolls (and I’m pretty sure we had both last year on Xmas morning.) This year I’m leaning towards your recipes for egg muffins & baked pancakes. GAH. I obviously need to celebrate the Twelve Days of Christmas (brunch)!!

The overnight tatertot breakfast casserole…OMG. BEST. THING. EVER.
Made it for friends and family while on vacation for NYE last year (before we were all stuck in our own personal bubbles) and everyone raved!! We had all ages- from 5 yo to 21yo plus parents and it was a success across the board. AMAZING! Thanks for sharing and everyone needs to have this in their lives. Make it today. Seriously. You won’t regret it!!
