This beef stew recipe is one of my favorite comfort food recipes and is know as the poor man stew. It taste amazing, but I can easily use vegetables that I have on hand. The beef cooks tender which makes for the perfect weeknight meal.

  • Cooking Methods – We love to pressure cook the beef stew but you can also cook on the stove top in a Dutch Oven or in the slow cooker.
  • Thickening the Sauce – If you need to thicken the sauce, make a cornstarch slurry with cornstarch and water. Combine 2 tablespoons of each and then add into the stew.

  • 1 lb lean ground beef
  • 1 sweet onion finely chopped
  • 1 teaspoon salt
  • 4 Yukon gold or red potatoes peeled and chopped into 1″ pieces
  • 1 lb bag carrots peeled and diced
  • 1 8 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 1 can diced tomatoes
  • 3 cups low-sodium beef broth
  • 2 teaspoon minced garlic
  • 1 teaspoon parsley flakes
  • 2 teaspoon Italian seasoning
  • 1 teaspoon salt if needed
  • 1 cups frozen green peas
