Keto Breakfast Burrito Ingredients

Now Let’s Make Our Low Carb Breakfast Burrito Recipe!

First thing you want to do is make the filling. In a large skillet add a little oil and the onions and saute for 1 minute. Then add the peppers and sausage. Once the sausage is completely cooked and browned take it off the burner and add the spinach. Just mix it a bit and it will start to wilt. You don’t want it to wilt too much as it will have more volume if it’s just slightly wilted.

Now it’s time to make the egg wraps. You need to have two skillets, one small skillet and one larger one. Spray the pans with cooking oil and then heat them to a medium heat.

Then beat an egg and pour into the smaller skillet. Swirl the egg around the pan to cover the whole bottom. Once it’s almost cooked loosen the edges with a spatula and flip into the larger pan. Sprinkle some cheese on top and in a few minutes it will melt and your wrap is done!

Take the wrap out of the pan and place on a plate. Add your sausage mixture, fold and place in the freezer for 2 hours. I do this so that they are easier to wrapin wax paper or parchment paper and then store in the freezer. Below you can see how I wrap them in wax paper.

Freezing The Breakfast Burrito And Heating Them Up

To freeze the burritos, once you’ve wrapped them, place in a freezer bag and set in your freezer. To heat one up just unwrap and microwave for 1 – 2 minutes. Make sure to let them cool before eating.

Thank you and I hope you like them. I’ve used eggs like this for other things. You can make a few “crepes” and cut them into noodles. Or use them in enchiladas or make savory crepes filled with chicken, etc. Good luck!

Great idea for a healthy brekkie. I used minced beef (dont know what breakfast sausage is here in australia), i added some dry taco seasoning mix and garlic to it for flavour. I had to use 2 eggs, but thats because i made big ones for my hubby. Very tasty, will def make them again. I omiited freezing for 2 hours first. Just wrapped them in wax paper and put straight into a ziplock bag. Let them cool down a bit, then straight into the freezer.

This might be a silly question, but when reheating in the microwave.. do you remove the parchment paper? I’m a newbie to food prep lol thanks!!

    • Denise

Hi Jen, that’s not a silly question. You can do either. If you want to keep it in the wrapper to eat you can use it. If you don’t eat the wrapper and take it off. It won’t hurt the burrito either way and for the short amount of time in the microwave the parchment paper will be fine. Hope that helps!

When you say breakfast sausage are you referring to one like Owens ?

    Reply

    • Denise

Hi Sheila, I’m not sure what Owens is but I meant the breakfast sausage that comes in a roll. I use Aldi’s brand but it is similar to Bob Evan’s or Jimmy Dean’s and it is in a plastic tube or roll. I didn’t use links or patties but the patties might work too. You just don’t want the casings. Hope that helps!

This is an omelette, call it a burrito but it’s an omelette.

I really don’t know why you have to be so mean. And if you want to get technical, that is not an omelette. A omelette is folded in half not in thirds as you see in the picture. The person who was nice enough to share their “version” of a healthy option for a breakfast burrito.. kudo’s to them for such a brilliant idea. If you can’t say anything nice why say anything at all? Your comment just isn’t warranted here.
