There’s something about the arrival of fall that makes all of us crave for hearty comfort food.

To me, nothing screams comfort more than a big pot of soup or stew. My mom used to make a big batch of homemade beef stew for us on the weekends as soon as the weather got cooler.

It was the ultimate cold weather food and we’d always go for seconds and thirds throughout the day.

Classic beef stew is still one of my favorite lazy Sunday meals I make for my own family now and they love it just as much as we did.

THREE AMAZING BEEF STEW RECIPES TO TRY

HOW TO MAKE THE BEST INSTANT POT BEEF STEW

  1. Start off by combining flour, salt, pepper, onion powder, and 1/2 teaspoon Italian seasoning. Add meat and shake until well coated.
  2. BROWNING THE MEAT:(FEEL FREE TO SKIP THIS STEP IN A PINCH BUT HIGHLY RECOMMENDED SINCE IT ADDS THAT EXTRA LAYER OF FLAVOR) Set the Instant Pot to SAUTE, add cooking oil and brown the meat on all sides. Meat will not be cooked through. (Be sure not to crowd the pot – you may have to work in batches). Transfer browned meat onto a large plate.
  3. Place the pot back in the pressure cooker and add onions and garlic and sauté for a minute or two then add the balsamic vinegar and tomato paste until just hot enough to deglaze the pot, about 1 minute.
  4. Add the beef back into the pot along with potatoes, sweet potato, carrots, celery, Worcestershire sauce, the remaining 2 teaspoons Italian seasoning, bay leaf, beef broth and (star anise if using). Stir to combine. If there is not enough liquid to cover the vegetables, add water – only as much as needed.
  5. Cover and seal the lid and set to 20 minutes with High Pressure on Manual mode. Allow the pressure cooker to release naturally for at least 15 minutes. Adjust seasonings with salt and pepper if necessary (discard bay leaf and star anise if used). Serve hot with fresh parsley.
  6. Make a slurry by whisking 3 tablespoons of cool water with 2-3 tablespoons cornstarch or flour (all purpose, gluten free or arrowroot powder). Set the Instant Pot to SAUTE and allow the stew to come to a boil and thicken up.

TIPS FOR MAKING THE BEST BEEF STEW

  1. What type of meat do I use for instant pot beef stew? We prefer using beef chuck since I find it produces the most tender beef but if you are in a pinch, you can use beef stew meat
  2. What is the best pressure cooker for making beef stew? Be sure to use at least a 6 quart Instant Pot pressure cooker for this recipe.
  3. Can I skip browning the meat before? While you can skip this step, I would definitely brown the beef in the Instant Pot prior to adding the other ingredients. It’s an extra, more involved step but completely worth it for that caramelized and hearty depth and extra layer of flavor you get. On those days you are pressed for time, you are totally free to skip the browning if you’d prefer an easy dump and go recipe.
  4. What vegetables do you use in beef stew? Be sure to use a combination of aromatics like onions and garlic plus vegetables. I used carrots, celery potatoes and a sweet potato. Feel free to leave that out if you’re not a sweet potato fan and you can also add some green peas or cauliflower if you like.
  5. What other key ingredients do I need to make the best beef stew? Add some tomato paste, Worcestershire sauce, balsamic vinegar and a star anise for a punch of flavor. If you can’t find a star anise or are not a fan, feel free to leave it out.

HOW TO USE YOUR INSTANT POT TO MEAL PREP BEEF STEW AHEAD OF TIME

  • Chop the carrots and celery the day before and add them to a zip-top freezer bag in the fridge
  • Peel and chop the potatoes and onions and store them in a zip-top freezer bag in the freezer. This prevents the potatoes from changing color and the onions from spreading odors in the fridge.
  • Cut the beef into chunks and place in zip-top freezer bags. Store in the fridge.

This Instant Pot Beef Stew recipe makes a big batch with enough for lots of leftovers. In fact, I think I love the flavors even more the next day. All those thick rich and deep flavors get a chance to build even more overnight.

So delicious and the perfect meal for busy weeknights or a cozy Sunday dinner.

FAQs

Is it better to slow cook or pressure cook beef stew? ›

Pressure cookers are great in a pinch, they let you braise or stew at the last minute on busy weeknights and most dishes are done in under an hour from start to finish. On the other hand, slow cookers do the dirty work for you, braising all day, allowing you to come home to a fully cooked meal.

Do you have to brown stew meat before Instant Pot? ›

While you can skip this step, I would definitely brown the beef in the Instant Pot prior to adding the other ingredients. It's an extra, more involved step but completely worth it for that caramelized and hearty depth and extra layer of flavor you get.

What is the meat stew setting on Instant Pot? ›

What about the meat/stew button? The meat stew setting is a one-click approach to cooking larger pieces of meat (like those in this recipe) in the Instant Pot. The meat stew setting on the Instant Pot is 35 minutes long, so it should work, but I haven't experimented with the setting myself.

Why is my stew meat tough in Instant Pot? ›

The Secret to Super Tender Beef

The best way to ensure your beef is tender in your Instant Pot stew is to braise it (aka pan sear it first, then let it stew). Braising turns tough cuts of beef into tender, fall-apart bites. But skip the pre-cut stew beef.

What is the advantage of cooking a stew in a pressure cooker? ›

Heat cannot escape, so the cooking temperature is maintained with minimal energy input. A pressure cooker saves 90 percent of the energy used to boil a pot on the hob. Some foods are perfect to cook under these hot and steamy conditions: a meat stock, for instance, takes advantage of all the pressure cooker's benefits.

Does a pressure cooker tenderize stew meat? ›

The pressure cooker can tenderize the most stubborn cut of meat and turn tough chewy fibers into gelatin, but a few wrong moves can turn meat into a shriveled tasteless lump.

What happens if you don't sear stew meat? ›

You'll have greyish tender meat in your stew that is lacking in flavor. If you CAN'T brown it first, and plan to, say, put everything in a crockpot ot slowcooker so you'll have food (and the smell of cooking!)

What is the best meat for stew? ›

Go for the chuck

The most common beef used for stew is chuck steak, also known as gravy beef or braising steak.

What can I add to beef stew for flavor? ›

Onions, carrots and celery (mirepoix vegetables) are classic for a reason, but don't be afraid to stray and get creative. Try using roasted garlic instead of regular garlic, or caramelize your onions before moving on to the next step. You can also add an incredible depth of flavor by adding dried mushrooms to the mix.

How long does it take to cook 2 pounds of beef in the Instant Pot? ›

Cooking time: When cooking a pot roast in an Instant Pot, allow 20 minutes for every pound of meat. For example, cook a 2-pound pot roast at high pressure for 40 minutes and a 3-pound pot roast for 60 minutes.

Can you overcook beef in a pressure cooker? ›

Steam penetrates food easily under pressure. So connective tissues in cubes of beef for soups or stews soften in 15 minutes or less, and a pot roast will be medium-rare in 30 minutes. Be sure to follow instructions carefully; at this speed, it's easy to overcook things in mere minutes.

Is beef stew better in Instant Pot or crockpot? ›

The Instant Pot is a fantastic tool because it cooks even frozen meats to tender perfection. Pressure cooking beef stew is much faster than cooking beef stew in the slow cooker. Also, to get the beef, potatoes and carrots really tender, you have to cook it longer in the slow cooker.

How do you keep meat moist in a pressure cooker? ›

The tightly sealed cooker creates a high-pressure environment that quickly and efficiently steams whatever is inside of it at an extra-high heat. This technique also forces moisture into the food quickly.

What is the best meat to pressure cook? ›

You can still pressure cook leaner pieces – like eye of round and top sirloin – but these work best if they've been stuffed, shredded or rolled (with other ingredients). Best cuts of beef to use: Chuck steak, Round Roast, Shoulder, Pot roast, Ribs, Brisket, Oxtail.

Is it better to slow cook or pressure cook? ›

Slow cookers are much better for cooking root vegetables and tough cuts of meat because the long, low-temperature cooking process is great for adding moisture and breaking down fat. Pressure cookers can get hot enough for meats and vegetables to brown in them when cooking, but slow cookers can't.

What makes meat more tender pressure cooking or slow cooking? ›

Traditionally cheaper cuts of meat always slow cook better. Slow cooking breaks down the connective collagen in meat, which turns into unctuous gelatine. This creates that soft and tender mouth feel we all crave.

Does beef stew get more tender the longer it cooks? ›

Not cooking the stew long enough.

Chuck meat is your best bet for beef stew, but it's also a pretty tough cut so it needs time to break down and become tender. Rush the cooking process and the beef will be tough and chewy. Follow this tip: For really tender meat, cook the stew low and slow, for approximately two hours.

Does stew taste better the longer it cooks? ›

Don't Stew the Stew Too Long Either

It might seem that cooking your beef stew on low for 8 hours will make it even better, but that is not true at all.
