Yay! Hooray for it being Friday! This week FLEW by. Did it fly by for you guys too? One thing I know to be certain is that I am super excited the weekend is almost here. I’m half tempted to just say “screw it” and take the rest of the day off and lay by the pool. Actually I may do this. This idea doesn’t sound half bad now that I’m typing it out. ;) Maybe I should type out my ideas more often! Although, I probably wouldn’t get any work done.

Do you guys have a hard time finding burrata? It’s so funny. When we lived in Colorado, I had the hardest time finding it. I could only ever find it at a local cheese market or OCCASIONALLY at Whole Foods, and THEY wouldn’t even always have it. Years ago, I remember TJ’s always having it. Lately it has been a total miss. When we moved to Wyoming, I walked in the local Safeway…and there it was…containers and containers of fresh burrata. The Safeway I lived near in Colorado NEVER had burrata. Funny how things happen that way.

So anyway, this burrata with fresh figs and crispy bread is one of my favorite snacks of all time. I like it because it consists of all of my favorite ingredients: cheese, figs, bread and balsamic. Hand me a platter of this stuff (and maybe some Marcona almonds), and I’d be good to go. It’s also the perfect dish to serve at a small gathering. It’s an inexpensive and delicious way to treat your guests to a snack before dinner without having to put a whole lot of work into it. I don’t know about you guys, but when I have people over, most of the cooking has to be done ahead of time. I hate being stuck in the kitchen while everyone else is mingling.

Recipe for this burrata with fresh figs and crispy bread is below, but it’s so easy you almost don’t even need a recipe! Pair it with a porter and have a wonderful weekend everyone! xo

  15. I love everything about this post!!!! It just looks amazing!!!
We have a fig tree in our garden so I am pinning this to my Fig board…..always good to have new ideas for using up the fruit.
Sadly this year, the tree was still recovering from our fire, so we had limited fruit and most of that was eaten by the roos, but I am hoping that by the time it bares fruits again, we will be back in the rebuilt house and I can get back to eating fish figs daily :-)

Love love love burrata. My story is exactly the same as yours!!!! It is pretty hard to find here in Western Australia, which upsets me, as you can by it in the supermarkets over east!!! Still it is occasionally at our farmers market and I make a mean homemade mozzarella that although not burrata, is pretty darn good.

    Yum. Pinning happily because YUM!!!

    1. Oh no! I’m so sorry to hear about the fire! :( I would love to have a fig tree! I will take homemade mozzarella over anything any day of the week! It can’t be beat! Thank you so much for the pin, Claire! xo
