One of our favorite cookies to make are my 3-Ingredient Flourless Peanut Butter Cookies. They are perfectly crunchy and chewy and so quick and easy to make. However, sometimes I want easy treat AND healthy in the same time. Enter these 3-Ingredient Banana Oatmeal Chocolate Chip Cookies! These cookies are naturally gluten-free, dairy-free, sugar and oil-free. So tasty! If you love oatmeal with bananas and chocolate - you will love these cookies!

These 3-Ingredient Oatmeal Chocolate Chip Cookies are perfect for lunchboxes, great packed for road trips, and make for a satisfying treat without the guilt. They are chewy, naturally sweet and filled with chocolate chips. Make sure to use vegan chocolate to keep them 100% vegan. You can use dried fruit in place of chocolate chips.

Ingredients:

  • banana
  • oatmeal
  • chocolate chips

Instructions:

This is one of the easiest cookie recipes you will make! Simply, mash two bananas, add oats and chocolate chip and stir in. Chill the dough in the fridge while your oven preheats. Bake cookies for 15 to 20 minutes and cool before serving. These cookies do not spread and will bake thick if simply scooped and dropped onto the sheet. I like to flatten them just a bit.

The taste:

These cookies are chewy and thick. The longer you bake them, the more chance the edges will crisp up, especially the mashed banana part. Obviously, they won't have the texture or taste of cookies baked with flour and sugar, so keep that in mind. However, these cookies are very satisfying if you are looking for a sweet-tasting treat that's healthy. You can use different add-ons in place of chocolate chips for more texture.

The base of the recipe is the mashed banana and oats mixture. You can bake it just like that, without the chocolate chips OR you can make lots of variations: dark chocolate chunk, white chocolate and coconut, dried fruit, etc.

Thank you for this recipe using old-fashioned oats! I made this today with 3 1/2 bananas (2 rather small and 1 regular to lge) and 1 3/4 cup old fashioned oats, 1 tsp vanilla, 1/3 cup mini chocolate chips. We live in an area with heavy humidity in the summer, so I flattened the cookies to about 1/2" thick to bake 15 minutes. The results: a chewy not too sweet treat with a hint of chocolate. The old-fashioned oats worked great although I did not refrigerate but rather left them on the counter to absorb some moisture from the bananas while the oven was heating. My kiddos gave it 5 stars.

What ingredient contributes most to a crisp cookie? ›

Fat is a very important ingredient in cookies – it tenderizes, crisps and browns, adds color and a wonderful flavor that is impossible to duplicate. Butter, our fat of choice, ensures good baking results and adds the most desirable taste, texture and appearance.

What is the secret to moist cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What is the extra step to add crunch to oatmeal cookies? ›

Adding more texture to your oatmeal cookies is as simple as adding a crunchy coating by rolling balls of cookie dough in a mixture of leftover oats and demerara sugar, a type of coarse, light brown cane sugar.

How do you make cookies soft and chewy vs hard and crisp? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What ingredients can affect crispness in a cookie? ›

Brown sugar also contains molasses which adds moisture and, because it's slightly acidic, works with the baking soda to give the cookies a rise and a cakier end result. Using only white sugar will result in a flatter and crisp cookie.

What causes crispy cookies? ›

How to Make Crispy Cookies. While brown sugar keeps your cookies moist and soft, white sugar and corn syrup will help your cookies spread and crisp in the oven. Using more white sugar in your cookies will result in a crispier end product. To achieve a crispy cookie, skip the rest in the fridge.

What makes cookies crispy when baking? ›

The temperature of your oven plays a huge role in the texture of your cookies! A lower oven temperature will give your cookies more time to spread before they start to rise, resulting in a crispier cookie. I recommend baking your cookies for a bit longer at a lower temperature to achieve the texture you're looking for.

What ingredient makes a cookie soft? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

What ingredient will keep cookies soft? ›

Eggs, particularly egg yolks. Eggs work to make your cookies soft in two ways: They add a ton of moisture, and the proteins add structure that prevents spreading. Cake flour instead of all-purpose flour. Low in protein and high in moisture, cake flour is used to leaven all sorts of baked goods.

What does adding cornstarch to cookies do? ›

1. Cookies. Cornstarch does kind of incredible things to cookies. I mean not only does it give them soft centers, prevents them from spreading, and makes them somewhat thick (in a good way), but it also contributes to the chewiness factor, which, in my opinion, is the most important cookie attribute.

Why are my oatmeal chocolate chip cookies so hard? ›

When adding the flour, be careful not to overmix. (Don't mix too vigorously or too long – follow recipe directions.) Overmixing develops the gluten in the flour, which can produce tough cookies.

Why are my oatmeal chocolate chip cookies dry? ›

Overmixing the dough

If you overmix the dough, the cookies will be dry and crumbly. The best way to fix this is to add more liquid to the dough. This can be done by adding milk, water, or even melted butter. You may also need to add more flour to the dough if it is too wet.

Why are my chocolate oatmeal cookies dry? ›

A: Chances are if the no-bakes turned out dry and crumbly it was because you overcooked them. While we call them cookies, oatmeal no-bakes are really more of a confection or fudge with oats stirred in. When it comes to candy, the longer it is cooked, the drier and harder it becomes.

Does baking powder make cookies crunchy? ›

Baking powder cookies: These were extra thick and tall, not chewy, more fluffy, and not quite as flavorful. Baking soda cookies: These cookies were well browned with slightly crispy edges, chewy interiors, and regular thickness. They didn't stale as quickly so they were more shelf stable.

How to stop cookies from going soft? ›

If you seal the container when the cookies are still warm, steam will get trapped inside the container, which might soften the cookies too much. I prefer using a ziplock bag instead of a food storage container because I can press as much air out of the bag as possible, which also helps prevent stale cookies.

Why are my cookies hard instead of chewy? ›

According to The Kitchn, this occurs when you over-mix the dough. Mixing the dough naturally causes gluten to develop in the flour, and while you do need a good amount of gluten to give your cookies structure, too much of it will result in hard cookies.

How do you fix crunchy cookie dough? ›

There are a few things you can do to add liquid to your cookie dough if it is too dry and crumbly. One option is to add milk, water, or another liquid until the dough is the right consistency. You can also try adding melted butter or shortening. If your dough is still too dry, you may need to add more flour.
